Homemade Turkey Stuffing
Ingredients:
2 sticks (one half pound) butter
4 stalks celery, chopped
2 tablespoons onion flakes
2 tablespoons parsley
3/4 loaf white bread
8 ounces bread crumbs
1 teaspoon thyme
1 teaspoon celery seed
1 teaspoon salt
Pepper to taste
Put all ingredients in a saucepan. Cook 3 minutes.
Add bread, bread crumbs, thyme, celery seed, salt and pepper. Mix well.
Makes 3 cups.
Homemade Giblet Gravy
Ingredients:
Giblets
2 stalks celery
3 teaspoons flour
5 ounces water
Salt and pepper to taste
Cover giblets with water. Add celery and boil until giblets are tender.
When turkey is fully cooked and has stood for 30 minutes, cut up giblets and put in turkey pan with turkey drippings.
Mix water with flour and add to heated drippings and giblets. Mix in slowly to avoid lumps.
Salt and pepper to taste.
Easy Oven Potatoes
Ingredients:
3-4 baking potatoes, washed and cubed
1/4 cup vegetable oil
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon dried parsley flakes
Pre-heat oven to 375 degrees.
Mix vegetable oil, salt, onion powder and parsley flakes in an 8 inch by 8 inch baking dish. Add potato cubes and toss well to coat with oil mixture.
Bake in oven (on middle rack) for 35 minutes or until potatoes are tender when pierced with a fork.
Classic Waldorf Salad
Ingredients:
2 cups McIntosh/Fuji/Braeburn/Gala apples, peeled and diced
2 cups celery, chopped
1 cup red seedless grapes, halved
1 cup walnuts, chopped
2 cups whipping cream
1/2 cup granulated sugar
6 tablespoons white vinegar
Combine apples, celery, grapes and walnuts. Stir.
Whip the whipping cream until almost stiff. Add sugar and beat in vinegar slowly.
Pour over apple mixture. Fold together.
Serves 8
Glazed Carrots
Ingredients:
1 bunch fresh carrots
3 tablespoons brown sugar
2 tablespoons butter
Cut off carrot tops and peel the remaining carrot. Cut carrot into slices.
Put carrots in medium saucepan, cover with water and cook carrot slices for about 8-10 minutes.
Drain water out of pan.
In small pot, melt butter and add brown sugar. Heat 3 minutes and add to carrots.
Mix and serve.
Homemade Pumpkin Bread Pudding
Ingredients:
3 eggs
1-15 ounce can of pumpkin
1-12 ounce can of evaporated milk
1-1/2 cups whole milk
1 cup sugar
2 tablespoons butter, melted
1/2 teaspoon vanilla
1-1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon ground nutmeg
6 slices Italian bread, cubed
3/4 cup raisins
1/2 cup pecans, chopped (optional)
Whipped cream
Pre-heat oven to 350 degrees.
Combine eggs, pumpkin, evaporated milk, milk, sugar, butter, cinnamon, vanilla, cloves and nutmeg in a large bowl.
Add bread cubes and raisins. Mix well.
Pour into 11 inch by 7 inch baking dish (greased) and sprinkle with pecans (if desired).
Bake for 50-60 minutes or until a knife inserted at the center of the dish comes out clean.
Serve warm with whipped cream.
Serves 8-10.
